How to Brew the Perfect Cup

A spoonful of grains, hot water and a few quiet minutes.

You will need

SOBA CHA, a teapot or infuser, freshly boiled water and a favourite cup.

The method

Use about one tablespoon of grains for 300 ml of water. Steep for 3 to 5 minutes, then strain.

Sobacha is forgiving: a longer steep gives a deeper, toastier flavour without harsh bitterness.

Second steeping

The grains can be steeped again for a lighter second cup.
